Enjoy the dance of the tropics and the temperate, with a slight touch of subtle elegance. A unique combination of coconut and raspberry, backed with a multitude of different textures, leading to a flavour and texture fiesta. During this 3.5-hours class, you will learn how to: - How to bake a dense yet soft almond cake. - Create a coconut and almond macaroon. - Cook raspberry purée (demo). - Make a light coconut mousse. - Cook a flavoursome coconut haupia. - Make a glaçage for the Glazing of the entremet. - Layering of the dish. Students will prepare all the components individually. Participant will bring back a 6 inch cake. Minimum age to join class: 16 years old
